Thimble cookies

These are very simple ball cookies from my amish baking cookbook. Using a thimble, or spoon, you make a small indent in the top and fill with jam or chocolate chips. For the record, the strawberry jam filled were the best.

Granola Bars

Found this recipe in the back of a magazine that my son brought home from school, Scholastic Parent and Child I think. They called it a fruity flapjack, but seems just like a granola bar. I put raisins and dried cranberries in mine, but could try any other dried fruits and possibly chocolate chips.

Blended Mocha

Blended together is a homemade version of a mocha or caramel frappuccino. Begin with ice, I usually fill the cup up, add 1/2 milk and 1/2 cold coffee. I make drip coffee, which is stronger than most brewing machines. Also the ratio of milk and coffee can be reflected to taste. Squirt in some chocolate or caramel syrup and blend all together.

Brownie Cheesecake

Split Pea Soup

I made this split pea soup in the crock pot. It turned out delicious. My kids, who usually do not like soups loved it. Followed recipe below, except at about 3 hours in I added about 2 more cups of water.

Lasagna

A very simplized lasagna, but very delicious.

Recipe:
package Lasagna noodles
1 pkg ricotta cheese (15 oz.)
2 cups shredded cheese
1/2 cup Parmesan cheese
2 eggs
1 jar marinara pasta sauce



Tuna Casserole

This was a simple recipe, and turned out well. Instead of french fried onions on top I used some bread crumbs. Also, in place of cream of chicken I used cream of celery soup.

Fettuccinie Alfredo

Homemade Alfredo sauce over fettuccine noodles. This recipe has been requested quite a few times, especially by the kids. Surpisingly simple, this recipe did not take much longer than making any sauce.

Recipe :
1/4 cup butter
1 cup heavy cream
1 clove garlic, crushed
1 1/2 cups freshly grated Parmesan
cheese
1/4 cup chopped fresh parsley

Melt butter in a medium saucepan over medium low heat. Add cream and simmer for 5 minutes, then add garlic and cheese and whisk quickly, heating through. Stir in parsley and serve.




Hummus

A family favorite, this traditional dish is packed with protein and a healthy treat served with pita bread or pita chips.

Recipe:
1 large can garbanzo beans (or 2 small)
4 tbs tahini
8 tbs lemon juice
4 cloves garlic
4 tbs olive oil
1 tsp salt
dash of pepper

Best is to put all ingrediants into a food processor and blend until smooth.



Basketball cookies

For basketball season this is a tummy treat. Sugar cookies with colored frosting and black gel.



Chicken Grilled Cheese Sammys

Adding a spin to the classic grilled cheese sandwiches by adding pre-grilled chicken. Served with a side of mac & cheese.
